A New Take on Brain Break

In this installment of Dining Delights, we bring you three recipes using only ingredients found at Brain Break. When the usual cereals, cookies, and drinks lose their luster, turn to this article for fresh ideas based on classic late-night snacks.

Apple Brown Betty

Ingredients:

1 muffin

¼ apple, chopped

1 tablespoon honey

Remove muffin top. With a spoon, scoop out the interiors of both halves of the muffin and dispose (or eat, if you’re too hungry to wait for your cooked treat). In another bowl, mix chopped apples and honey. Place apple mixture inside each muffin half and replace top half. If desired, microwave for 30 seconds for a caramelized effect.

Peanut Butter and Marshmallow Chex Mix

Ingredients:

2 tablespoons peanut butter

3 tablespoons milk

1 tablespoon honey

½ cup miniature marshmallows

1 cup Chex cereal

In a bowl, combine peanut butter, milk, honey, and marshmallows. Microwave for 30 seconds or until marshmallows just begin to inflate. Stir. Add cereal to desired consistency, mix well, and enjoy while warm, gooey, and delicious.

Apple Cider

Ingredients:

1 bag Bigelow Cinnamon Stick tea

¼ cup boiling water

½ cup apple juice

In a mug, brew cinnamon tea in boiling water until dark, around 30 seconds. Remove tea bag. Add apple juice and microwave for 30 seconds.
